An internal temperature >135°F should be your guideline for safety not the color of the meat.  Overcooked compromises flavor and digestibility. 
But feel free to char away and wash down those polycyclic hydrocarbons with your IPA.

If you or whomever is cooking there had a Blackstone .. you’d be able to cook it properly

Thanks for the tip, I’ll advise our hosts.

My cooking skill sets are such that I can probably please the crowd with any heat source you give me.

More solid advice from the Ditty. Stupid national Cancer society!

  • Pass on the “burnt ends” - discard any charred, blackened areas
  • When it comes to red meat, don’t cook until it’s well-done

My mother's philosophy from growing up in the 30s and 40s, cook the meat until it's the texture of leather, and I wonder why I never liked meals with meat as a kid. I didn't realize you could cook it medium rare and enjoy a juicy steak.

Buying one of those cheap instant read thermometers was my second favorite purchase ever.  
 

Although a good chef can tell by touch.

.LONG TERM /SATURDAY THROUGH THURSDAY/...
Key Points:

* Mid-summer heat and humidity through the period
* Potential for local heavy downpours Saturday and perhaps Wednesday

 

Of course a strong cold front with severe would be fun, but that has become impossibly rare the past 10-20 years. :D
