Unfortunately, the pickings from this site are slim since they don't archive everything. Your next best bet in the Plymouth State University Make-Your-Own site. Specifically, the Make-Your-Own for archived data page, which can be found from the PSU weather center home page. From that archive page you'll be able to plot old observed skew-ts and hodographs. An additional resource for archived soundings is the Univ of Wyoming site. Finally, the SPC Event Archive will give you exactly what you're looking for with minimal effort.
